There is nothing like the taste of a delicious hot Sweet Potato Casserole. Sweet Potato Casserole is delicious served with slices of turkey meat, chicken, or any kind of beef. Sweet Potato Casserole of some kind is always a must at all times of the Holiday Seasons. I have tried a lot of different recipes for the Sweet Potato Casserole and the honey in this recipe gives the sweet potatoes so much natural flavor.
Utensils:
One oven proof Casserole Dish
Kitchen Spoons
Oven Mitts
One Cookie Sheet lined with Aluminum Foil (for easier clean-up)
One Large Mixing Bowl
Kitchen Fork
One Small Mixing Bowl
Ingredients:
5 or 6 Sweet Potatoes or Yams
4 Tablespoons Butter or Margarine
1/4 Cup Brown Sugar
1/4 Cup Honey
One package any size Marshmallows
One Teaspoon Vanilla Extract
1/4 Teaspoon Cinnamon
1/4 Teaspoon Nutmeg
1/2 Cup Crushed Pecans
Directions:
Preheat the oven to 400 degrees. Rinse the sweet potatoes or yams off with cold water. Prick the potatoes with a fork and place on the cookie sheet lined with aluminum foil. Bake the sweet yams, until tender and done. About 40 to 50 minutes. Remove from the oven, and let the potatoes cool for about 15 minutes. Scoop out the pulp of the potatoes and place inside mixing bowl, adding the honey, cinnamon, nutmeg and vanilla. Stir.
Lightly butter your oven proof casserole dish and pour your sweet yams into the dish.
In the small mixing bowl, combine the nuts, brown sugar and the butter. Stir. Sprinkle this mixture over the sweet potatoes.
Top the sweet potato casserole with the marshmallows and bake until browned.
Serve warm while the marshmallow topping is still gooey.
*Note: If you like your casserole sweeter, either add more honey and/or more brown sugar.
