Squash Casserole

Squash Casserole is a delicious side dish which goes with any kind of dinner meal. You will need to go shopping to purchase the ingredients that are needed to prepare the Squash Casserole. Here again, I have made this recipe so many times now that I not need to look at the directions any longer when preparing the Squash Casserole. Squash Casserole goes well with Thanksgiving Dinner.

                                                                            


Ingredients: 

Five to six yellow summer squash

Two to three carrots, grated

One small onion, diced

One package shredded cheddar cheese

One can cream of chicken soup

One half soup can of milk

One small container sour cream

Salt and black pepper to taste

One package of your favorite stuffing mix, such as Stove Top (any flavor)

One half cup of butter or margarine

Utensils: 

A large mixing bowl

An oven proof casserole dish

A regular size pan

Cheese Grater

One Kitchen Spoon

Kitchen Knife

A can opener

One Kitchen Strainer

Directions:

Wash the yellow  summer  squash  and slice  the squash  into about  one fourth  of an inch rounds. Add  the yellow summer squash, and onion to a pan of boiling water, boil on medium-high heat for about five to seven minutes. Remove  the  summer squash  mixture from  the  heat and drain. In  the  mixing  bowl, combine  the shredded cheddar cheese, the can of soup, carrots, the half of soup can of milk, the sour cream and the salt and black pepper to taste. Mix well. Add  the drained, cooked squash mixture to the soup  mixture that you just stirred up. Lightly grease your casserole dish and pour the squash mixture into the dish. Melt your half of a cup of butter either in the microwave oven for a few seconds or on  top of your stove top. Pour  the entire package of the stuffing mix, dry, into another mixing bowl and mix with the melted butter or margarine. Pour this mixture on top of the squash mixture in your casserole dish.

Bake the squash casserole, uncovered  on about 375 degrees  for about thirty to  forty  minutes or until  the middle of the casserole is bubbly. This recipe will serve around six people.   Serve the squash casserole with
chicken,  pork, or  steak, a  nice  salad and  some dinner  rolls  and  dinner  is  served.
