Cabbage Casserole

When I ran across a recipe to cook cabbage without stinking up my entire house with stinky cooked cabbage, I could not wait to get all of the ingredients to make the cabbage casserole. The Cabbage Casserole is delicious served up with a tossed salad and some dinner rolls.

Utensils:

Kitchen Strainer

Can Opener

One Spoon

Frying Pan

One Oven Proof Casserole Dish

Aluminum Foil

Ingredients:

One Head of Cabbage, washed, sliced into thin strips

Two pounds Hamburger Meat or ground turkey meat, drained if using the Hamburger Meat

One package shredded cheddar cheese

One can diced Tomatoes

A fourth of a cup of cold Water

One jar of your favorite Spaghetti Sauce

One small Onion, diced

One Green Bell Pepper, diced

One Garlic Clove, minced

Salt and Black Pepper to taste

Oil or Margarine to grease the casserole dish

Directions:

Fry the hamburger meat, adding the diced onion, garlic, and green bell pepper. Drain the meat mixture when that it is done, cooking the hamburger meat for about ten to twelve minutes.

Lightly grease the oven proof casserole dish. Place the sliced cabbage strips into the casserole dish. Lightly press down the cabbage, creating a flat surface. Add the fourth of a cup of water to the casserole dish. Season the top of the cabbage with the seasonings. Return the hamburger mixture back to the frying pan and add the can of diced tomatoes and the jar of spaghetti sauce. Mix well and place the meat mixture on top of the cabbage in the casserole dish. Cover with aluminum foil and bake for forty five minutes, or until the cabbage is done. Remove from the oven. Remove the aluminum foil from the top of the casserole dish and add the entire package of the shredded cheese. Return the casserole dish back to the oven for about ten minutes until the cheese is melted and bubbly. Let the Cabbage Casserole stand for around twenty minutes before trying to slice it.

Navy Beans

I do not prepare Navy Beans often, but when that I make them, I always go back for seconds. Navy Beans are delicious served with Fried Potatoes and Cornbread. I also do not like my Navy Beans cooked in the crock pot. I like to cook them on the stove top for a few hours. You have to have sliced onion and also chow chow along with the Navy Beans. Have you ever heard of Chow Chow before?

Utensils:

One Strainer

One Spoon

One Large Pasta type cooking Pot

One Sharp Knife

Scissors

Ingredients:

One package Navy Beans, cleaned, washed

One Piece of Country Ham, diced or One Ham Hock, I prefer the Ham Hock

Cold Water

Salt and Black Pepper to Taste

One Onion, peeled, sliced

One Jar Chow Chow

Directions:

Open the package of the Navy Beans and pick through them getting out any rocks or weird looking beans.
Pour the beans into the strainer and rinse them off.

Fill the large pasta type cooking pot with water and bring to a boil, add the washed Navy Beans and reduce
the temperature of the heat to medium. Add the Ham Hock to the beans. Stir often and cook the Navy Beans for about three to three and a half hours, adding more cold water as often as necessary, until the beans get done. When the Navy Beans get about half way done, season them with the salt and the black pepper.

Remove the Navy Beans from the heat and let them stand around for about twenty minutes before serving them. Serve the Navy Beans with onion slices and the Chow Chow. And of course do not forget the cornbread.

Turkey - NuWave Oven Style

Yesterday I prepared a delicious Turkey in my NuWave Oven.  Oh at the breeze of ease in fixing it.  There was no bulky heavy roaster pan or any other kind of baking pan to have to deal with.  With the NuWave Oven, there is no more bending over to get anything in or out of the oven.

Utensils:

NuWave Oven with the Extender Ring that the Oven comes with

Oven Mitts

Two Granny Forks

Aluminum Foil

Kitchen Scissors

Turkey Platter, or Casserole Dish

Ingredients:

Turkey (14 Pound)
*Note:  A 14 Pound Turkey is the biggest one that will fit inside of the NuWave Oven

Salt and Black Pepper

Butter or Margarine

Directions:

Get the NuWave Oven ready, fit with the drip pan, the small baking rack, and with the extender ring firmly locked on.

Unwrap turkey from it's wrapping, using the kitchen scissors.  Place the turkey in the kitchen sink and rinse under cold water.  Remove inside package of guts, and the neckbone.  Either use this for gravy or discard.

Place the cleaned turkey on top of the baking rack.  Season however you like your turkey.  I just buttered, salted and peppered mine.  Place a sheet of aluminum foil over the turkey.  Place on the lid to the NuWave Oven, press cooktime, 90 minutes and let it rip.  After 90 minutes, take both granny forks and carefully turn the turkey over on it's other side.  Then cover the turkey back up with the aluminum foil, press cooktime, 90 more minutes and start.  About fifteen or twenty minutes before the turkey gets done, press pause, and remove the aluminum foil.  Put the lid to the NuWave Oven back on and press start and let the turkey brown.  When the NuWave Oven beeps again, check to see if the turkey is done.  If not, program more time into the NuWave Oven, press start and wait for the bird to get done.
