Rhonda's Peanut Butter Candy


This is another favorite recipe of mine that I, have been making now for many many years. The original name for this candy recipe is Buck-Eyes, but over the years, I have improved on making the candy easier and better tasting.

Rhonda's Peanut Butter Candy 

Ingredients:

1 (4 lb.) Jar of Creamy Peanut Butter
1 Box plus about 1/2 Cup Powdered Sugar (sifted)
1 Small Can Evaporated Milk (not sweetened condensed milk)
1/2 Stick Butter or Margarine, (melted)
1 Package Chocolate Bark, (over the year's, I have found that the Kroger brand of the Chocolate Bark tastes the best)
1 Package White Chocolate Bark

Directions:

Combine the Creamy Peanut Butter, the box of Powdered Sugar, 3 Tablespoons of the Evaporated Milk, and the Melted Butter. Using your fingers, mix this dough until you have a consistency of play dough. Add more powdered sugar as needed until you reach this consistency.

Cover and chill the peanut butter mixture for at least 2 hours. Roll the peanut butter mixture into bite size balls, waxed paper works the best for placing the candy on while making it.

Melt the Chocolate Bark, either in the microwave or in a double boiler, and dip about half of the peanut butter balls into the Chocolate and Melt the White Chocolate Bark and dip the rest of the candy. Dip the candy with toothpicks. When the candy is all dipped, with a teaspoon, take the remaining Chocolate and place a small dallop of Chocolate on the tops of each one of them. Store in air tight containers. Candy stays fresh for a month when properly stored.

This delicious candy makes around 180 pieces.
